Our beef roasting joints are selected from knuckle cuts which are first trimmed, then matured for 21 days and finally, tied ready for roasting. This guarantees succulent, tender and richly flavoured meat, perfect for your Sunday lunch, sliced up in sandwiches or, enjoyed as cold cuts with salad, pickles, sauces and dips including horseradish, mustard and aioli.

Suitable for freezing. Freeze on or before Use By date. Use within 1 month. Defrost thoroughly before cooking and consume on day of defrosting. Do not refreeze.

Preparation and Usage
Remove all packaging. Wash hands, surfaces and utensils after touching raw meat. Keep raw meat separate from cooked foods.
Oven:
Rare: 18 minutes per 500g
Medium: 22 minutes per 500g
Well done: 33 minutes per 500g
1. Allow the product to stand at room temperature for 30 mins before cooking.
2. Preheat oven and baking tray. Oil and season surface of meat.
3. Place in oven at 240ºC / Fan 220ºC / Gas 9 for 25 mins.
4. Remove joint from oven, add 4 tbsp of water and cover joint loosely with foil. Reduce temperature to 180ºC / Fan 160ºC / Gas 5 and continue to cook for remaining time.
5. For rare, cook for 18 mins per 500g. For medium, cook for 22 mins per 500g. For well done, cook for 33 mins per 500g.
6. Baste joint occasionally during cooking.
7. Remove from oven, cover with foil and rest for 15 mins before carving. For best results, carve thinly and drizzle over juices in roasting tray, or use juices to make a gravy.
