Preparation and Usage
Recipe:
Beef fillet with rosemary potatoes cream and Ponti Aceto Balsamico di Modena P.G.I. Gold Cap.
Ingredients (serves 4)
800 gr Beef fillet
450 gr yellow potatoes
1 shallot
1,5 dl milk
5 gr rosemary
250 gr peanut oil
25/30 gr Ponti Aceto Balsamico di Modena P.G.I. Gold Cap.
Salt & pepper q.s.
Method
Cut the beef fillet into medallions of about 3 cm and sear them in a hot pan with a drizzle of extra virgin olive oil. To make the potatoes cream, in a saucepan sauté de chopped shallot with some extra virgin olive oil, add a whole spring of rosemary and the peeled and diced potatoes. Add one glass of milk and one glass of water and continue to cook. Once the potatoes are cooked, remove the rosemary spring and blend until smooth and creamy. To make the chips, cut potatoes into very thin slices using a vegetable peeler or metal cheese slicer. Wash them in cold water to remove starch. In a large pan, heat the peanut oil to 150°/160°C (302°/320°F), toss one at the time into hot oil, fry until golden brown and then drain them on paper towel. Serve and season to taste with Ponti Aceto Balsamico di Modena P.G.I. Gold Cap.

Awful
Watery & sour. One of the worst balsamic vinegars Ive tried. Wish I could return it.
Good stuff
I like this on my salads with apple cider vinegar and olive oil. Some say it is watery... no, it is just NOT concentrated as others are which is why the sugar content is much lower than what they are comparing it to. A little goes a long way.
Thin and acidic
Had high hopes given the reviews. It's thin and sharp and honestly is only marginally different to Sarson's. Wouldn't buy again.
