Preparation and Usage
Usage:
Salt-packed capers are too salty to be eaten straight from the jar; soak them in cool water for about 15 minutes and rinse in several changes of water.
Recipe:
Caponata with Ponti Capers in Salt
Ingredients:
30gr white wine vinegar
15gr sugar
500gr eggplants
250g celery
150gr onions
80gr Ponti Organic Pitted Green Olives
15gr Ponti Capers in Salt
30gr pine nuts
250gr vine tomatoes
200gr seed oil for frying
Basil q.s.
Extra virgin olive oil q.s.
Salt q.s.
Method
Cut the eggplant into 1-inch cubes, toss them with a generous amount of salt and place them in a colander over a bowl or the sink. Let the salted eggplant sit for about 1 hour. Pour the seed oil into a large frying pan, place over medium heat and add the eggplants. Cut the celery into cubes, peel the onions and slice them thinly. Remove the seeds from tomatoes and cut them into cubes. Heat 4 tablespoons of oil in a cast iron pan, add the onions and sauté them on low heat. Add Ponti Capers in Salt, Ponti Organic Pitted Green Olives and pine nuts. Add the tomatoes, season with salt and let the excess liquid evaporate. Then add sugar and pour white wine vinegar. Finish by adding the fried eggplants, a few hand-cut basil leaves, salt to taste and stir. Leave to cool so that all the flavours blend. Eat it warm or cold.

Just remember to soak them!!
These are great capers, but as they are salted they are much nicer if you steep them in some fresh water for a wee bit before using.
Great in a salad
Having read some of these reviews, I'm now unsure whether I was supposed to soak them or not before using them. I didn't. I just added them to a salad nicoise straight from the pot. They tasted great, I prefered to the usual ones you get in brine. I guess if you are trying to cut down on salt that might not be a good idea, but I love salty food.

the ones from waitrose are far less salty, after soaking in water for 5 mins they are good to go NOT these you need to soak them for a good 30min, that said they are still tasty.
Lovely but how to store?
When soaked correctly these are beautiful capers. I can't find anywhere how to store them though. They came in the fridge bags, but I'm not sure that they should be refrigerated?
