Preparation and Usage
“Gricia” style Panini with Ponti Fine Herbs Artichokes
Ingredients
1 durum wheat bread
Ponti Fine Herbs Artichokes
40gr Pecorino Romano cheese
20gr Cooking cream
60gr Guanciale
Black Pepper q.s.
Extra virgin olive oil
Method
Slice the bread in half, toast it on a hot plate, and then season with a little oil and pepper. Cut the Guanciale into very thin strips while heating some oil over medium heat in a large pan. Add the Guanciale in strips, lower the heat, and brown it until the fat begins to melt and turns crisp and golden. Drain the strips on paper towel, setting aside one tablespoon fat. In a large pan heat the cooking cream slightly, add the Pecorino Romano cheese and then whisk everything until smooth. Season with Guanciale fat and a generous grinding of pepper. Place Ponti Fine Herbs Artichokes on the bread’s bottom slice, add the fondue and finish with some crispy Guanciale. Add the top of the bread, press the sandwich together for a few seconds and buon appetito!
