If the current recipe for these Galette butter biscuits was created back in the middle of the last century , the actual origin of the biscuit dates back 100 years earlier when the bakers from Normandy made this little round biscuit with serrated edges made from equal part butter, flour and sugar under the name "sable" (shortbread). Encouraged by the use of the train and influx of tourists, they began producing them throughout Normandy during the time between the two wars.
