Solera 1847 is an elegant Cream: made from 75% Palomino grape, blended with Pedro Ximènez. Dark mahogany in colour it is velvety soft on the palate conjuring flavours of dried figs and raisins, with a toffee finish.
Solera 1847 is a fantastic end to meal, accompanying many desserts such as sticky toffee pudding, ice cream and some cheeses.

Solera 1847 is an elegant Oloroso Dulce: made from 75% Palomino grape, blended with Pedro Ximènez. Dark mahogany in colour it is velvety soft on the palate conjuring flavours of dried figs and raisins, with a toffee finish.
A superior dark cream sherry aged for around nine years, Solera 1847 has a velvety palate, with concentrated flavours of sweet raisins and figs with a touch of nuttiness on the finish.

Tasting Notes
Dark and intense, with aromas of raisins, vanilla and wood. On the palate it is velvety smooth with sweet fig and caramel followed by a slight nuttiness on the finish. Fantastic with desserts such as ice cream and apple pie.
History
Gonzalez Byass was founded in Jerez by Manuel Maria Gonzalez in 1835. The first Barrels of Tio Pepe were exported to London in 1844, and in 1855 the UK distributor, Robert Blake Byass was made a partner in order to strengthen links to the UK. Ever since, Gonzalez Byass has been dedicated to the production of quality sherry wines, and is still controlled by the Gonzalez family, now in it's fifth generation. Solera 1847 is named in honour of the first birthday of the founders son.
Regional Information
Gonzalez Byass is situated in the city of Jerez, Andalusia, in the heart of D.O. Jerez. Owning over 800 hectares of vineyard, all situated in Jerez superior. This area enjoys a warm and humid climate which helps in the maturation of the grape. The soils of the area are high in chalk, known as 'albariza soil' this helps to maintain moisture during the long dry summers. With vineyards split 95% Palomino and 5% Pedro Ximenez, Gonzalez Byass is the only winery to have PX planted in Jerez.

Vinification Details
The Palomino wine is fermented in stainless steel tanks and fortified to 18% alcohol, the Pedro Ximenez is fortified to 15.5%. The wines then enter their own separate solera systems to begin ageing. After four years the wines are blended and aged through the Solera 1847 solera for a further 8 years.

My favourite sherry
I first tasted this Sherry in the bodega where it is made and I fell in love. Its dark, sweet and full bodied without being sickly like some sherries can be.

Lovely Sherry
This was my annual selection of sherry this year and having tried it this evening I am very pleased. A lovely balance, not too sweet or dry and a great depth of flavour. I would but it again for sure.

No more need be said. Expensive, but worth it. Even better served from the fridge.

Very sweet
This is fine, but for me it is a little thin on flavour and too sweet. I'll stick to my usual supermarket high-end brand that is cheaper and has greater depth with less sugar.
