Recipes
Ingredients: 1/4 cup Tiana Organic coconut flour sifted, 1/4 cup Tiana Organic virgin coconut oil or butter, 1/3 cup cocoa powder, 3 medium eggs, 1/3 Tiana Organic coconut nectar, 1/4 teaspoon salt, 1/4 tsp. vanilla essence.
Preparation: In a saucepan at low heat, melt the oil or butter and stir in the cocoa powder. Remove from heat and let it cool. In a bowl, combine eggs, coconut nectar, salt and vanilla; stir in cocoa mixture.
Whisk coconut flour into batter until there are no lumps. Let batter rest for 4 to 5 minutes to allow it to thicken slightly. Drop batter by the spoonful on greased cookie sheet. Bake in a preheated oven at 175ºC or UK Gas Mark 4 for 14 minutes. Makes about 16 cookies.
Walnut Raisin Muffins
Ingredients: 1/4 cup sifted Tiana Organic coconut flour, 2 tablespoons Tiana Organic virgin coconut oil or butter, melted, 2 tablespoons coconut milk or cream, 3 medium eggs, 1/4 teaspoon vanilla essence, 1/4 teaspoon baking powder, 3 tablespoons honey, 1/3 cup raisins, 1/3 cup walnuts and 1/4 teaspoon salt.
Preparation: Blend together eggs, coconut oil, honey, coconut milk, vanilla, raisins, walnuts and salt. Combine coconut flour and baking powder then whisk into batter until there are no lumps. Pour batter into greased muffin cups. Bake in a preheated oven at 205ºC or UK Gas Mark 6 for 15 minutes.
Makes 6 muffins.

Great Organic Coconut Flour
The best coconut flour on the market in my opinion. Very fine and very soft texture compared to the majority of stuff out there now. Slightly more expensive, but the quality reflects that.

ideas please?
Love the idea of this, but after unsuccessfully attempting to make a cake, not sure how to substitute it for normal flour. Can anyone advise?!
Strong toasted coconut flavour
Brilliant review by Tonglen, I completely agree. All the coconut flours vary quite considerably in taste, my preference is Sukrin as it's very light and perfect for fairy cakes. Tiana flour is better for breads or denser foods as it has a stronger flavour, but that's just my opinion :-)
Finely milled, has toasted coconut flavour
I have tried all coconut flours Ocado stocks and they are all different. Tiana flour resembles grain flour in texture the most, it is really finely milled but it has a toasted coconut flavour, which is not always good, depending on what you are making with it. Biona coconut flour is finely milled but a bit grainy, has very little coconut flavour and is good for general cooking. Sukrin is a bit less finely milled but has very pleasant raw coconut flavour and is the best for raw desserts.
