Chocolate Cookies
Ingredients: 1/4 cup Tiana Organic coconut flour sifted, 1/4 cup Tiana Organic virgin coconut oil or butter, 1/3 cup cocoa powder, 3 medium eggs, 1/3 Tiana Organic coconut nectar, 1/4 teaspoon salt, 1/4 tsp. vanilla essence.
Preparation: In a saucepan at low heat, melt the oil or butter and stir in the cocoa powder. Remove from heat and let it cool. In a bowl, combine eggs, coconut nectar, salt and vanilla; stir in cocoa mixture.
Whisk coconut flour into batter until there are no lumps. Let batter rest for 4 to 5 minutes to allow it to thicken slightly. Drop batter by the spoonful on greased cookie sheet. Bake in a preheated oven at 175ºC or UK Gas Mark 4 for 14 minutes. Makes about 16 cookies.
Walnut Raisin Muffins
Ingredients: 1/4 cup sifted Tiana Organic coconut flour, 2 tablespoons Tiana Organic virgin coconut oil or butter, melted, 2 tablespoons coconut milk or cream, 3 medium eggs, 1/4 teaspoon vanilla essence, 1/4 teaspoon baking powder, 3 tablespoons honey, 1/3 cup raisins, 1/3 cup walnuts and 1/4 teaspoon salt.
Preparation: Blend together eggs, coconut oil, honey, coconut milk, vanilla, raisins, walnuts and salt. Combine coconut flour and baking powder then whisk into batter until there are no lumps. Pour batter into greased muffin cups. Bake in a preheated oven at 205ºC or UK Gas Mark 6 for 15 minutes.
Makes 6 muffins.
