Preparation: cut the meat or vegetables into generous pieces, or de-vein the prawns.
1. Heat 1 tsp of oil in a pan, add the spices and cook for 20 seconds
2. Add the meat (or prawns or vegetables) and brown lightly before adding the base sauce. Cook for 2-3 minutes.
3. Stir in the main sauce and simmer for 3-5 minutes or until the meat (or prawns or vegetables) are cooked through.
Serves 2-3 with rice and roti

Use these handy tips to customise your dish:
Try with paneer cheese.
Add ground almonds for a nuttier taste.
If you have time, marinade the chicken or meat in the base sauce for an hour to allow the flavours to tenderise and permeate the meat.
Dress it up by garnishing with almonds, pistachios, raisins, dried figs or apricots.
Finish with a little saffron or coconut cream.

3 simple steps
Heat spices
Add fresh ingredients and base
Stir in sauce and simmer
Bits to buy:
250g skinless, boneless chicken, or paneer, seafood, vegetables, lamb, pork or eggs
From your cupboard:
1 tsp vegetable or olive oil
For extra heat, simply add the chilli

Preparation: cut the meat, fish, paneer or vegetables into generous pieces or halve your boiled eggs.
If you don't like whole spices, powder these in a pestle and mortar and add them in at the end of step 3, alternatively if left whole remove them with a spoon before serving.
If you are using fish, add this with the main sauce in step 3.
