Willie Harcourt-Cooze is all about flavour and has redefined how millions of people worldwide think about chocolate. His dream of making the world’s best chocolate was born on Hacienda El Tesoro, high in the Cloud Forest in Venezuela, a cacao farm he fell in love with, bought and went to live on in the early 1990’s.
Willie uses only the world’s great single estate cacaos, which like fine wines all taste remarkably different. He sources them direct from the farmers, then makes them into chocolate ‘bean to bar’ in his factory in Devon, using neither vanilla nor soya lecithin, so preserving the delicate flavour notes of the beans.
As a cacao farmer himself, Willie puts ethical sourcing at the heart of how he does business and buys his beans direct from the farmers. No chemicals are used on any of the cacao beans.

Loved this. Lovely and rich. Mixed with vanilla paste or whiskey or milk or honey!
Not in a tin
Comes as one solid cylinder block. It grates easily on my microplane grater. Nice flavour to make hot chocolate (which is nothing like ordinary hot chocolates or cocoa powder hot chocolate but has its own distinctive attributes). I used too little yesterday and will probably have to faff around a bit to get the right amount. I thought it was in a tin but it is only in gold paper with a paper wrap.
lovely and rich
I have got gestational diabetes and as such I had to cut out most of the sugar. I melt 1 square of 90% dark chocolate and grate Willies Cacao into a mug, pour hot milk and it makes a lovely rich drink. Whats most important is that it doesnt spike my blood sugar, but it hits the spot when I crave a treat! Definitely a keeper
secret ingredient
I've been using Willie's Cacao for years now and it's my secret ingredient in chillies and dark rich winter casseroles. It adds a very rich deep flavour, a little grating goes a long way.

Ive been using the Willies 100% range since 2014 and love the various flavours depending on the type of cacao beans. My favourite is the Colombian but this one is also great, especially for making 100% hot chocolates. To those leaving negative reviews and complaining about the taste: this is 100% chocolate, it is bitter, it is sugar free, so its supposed to taste like this, and this one is one of the best 100% chocolates out there. Focus on the amazing cacao flavours instead of the absence of sugar.
