Ramen is a Japanese noodle soup dish that typically consists of noodles, soup and toppings. Authentic ramen noodles are usually made of four basic ingredients: wheat flour, salt, water and Kansui. Ways to enjoy Ramen
Flavours
There are 3 main flavours of ramen soup: Shio (salt), Shoyu (soy sauce), and Miso. Shio ramen is often very light but quite salty. Shoyu is soy sauce based, often combined with other seasonings such as chilli oil, sake, minced ginger etc.
Miso ramen is the most umami-rich and heaviest, with a bolder and more complex flavour.
Broth bases:
Ramen masters often add umami rich ingredients, such as pork bone or chicken bone (can opt for soup stock to save time), for a more sophisticated taste. Dashi is also commonly used to add depth of flavour. Dashi is usually made with dried kelp (kombu), bonito fish flakes (katsuobushi) or a combination of the two.
Toppings & garnishes:
Popular ramen toppings include soft boiled egg, chasu (braised)/roasted pork belly, alternatively use chicken), sweet corn, menma bamboo shoots, seaweed, blanched greens such as pak choi, finely chopped spring onions and so on
Cooking instructions (cook from frozen):
1 Add the noodles to a large pot of boiling water and simmer for maximum 1 minute. Avoid overcooking as it will affect the texture.
2 Remove from heat and drain. Serve with hot soup, top with soft boiled egg, sweet corn or other toppings of your choice and garnish with finely chopped spring onions.
