Ramen is a Japanese noodle soup dish that typically consists of noodles, soup and toppings. Authentic ramen noodles are usually made of four basic ingredients: wheat flour, salt, water and Kansui. Also called lye water, Kansui is a type of alkaline mineral water and is the distinguishing ingredient that gives ramen noodles a yellowish hue and springy, chewy texture.

Flavours
There are 3 main flavours of ramen soup: Shio (salt), Shoyu (soy sauce), and Miso. Shio ramen is often very light but quite salty. Shoyu is soy sauce based, often combined with other seasonings such as chilli oil, sake, minced ginger etc.
Miso ramen is the most umami-rich and heaviest, with a bolder and more complex flavour.
Broth bases:
Ramen masters often add umami rich ingredients, such as pork bone or chicken bone (can opt for soup stock to save time), for a more sophisticated taste. Dashi is also commonly used to add depth of flavour. Dashi is usually made with dried kelp (kombu), bonito fish flakes (katsuobushi) or a combination of the two.
Toppings & garnishes:
Popular ramen toppings include soft boiled egg, chasu (braised)/roasted pork belly, alternatively use chicken), sweet corn, menma bamboo shoots, seaweed, blanched greens such as pak choi, finely chopped spring onions and so on
Cooking instructions (cook from frozen):
1 Add the noodles to a large pot of boiling water and simmer for maximum 1 minute. Avoid overcooking as it will affect the texture.
2 Remove from heat and drain. Serve with hot soup, top with soft boiled egg, sweet corn or other toppings of your choice and garnish with finely chopped spring onions.

Convenient but yet delicious ramen
I love this ramen. Even though it’s frozen food, but yet it is delicious when cooked. Only takes a couple of minutes to cook, which is convenient when you want a quick meal.
Genuine ramen
As an Asian I'm picky about noodles, tried a lot of instant noodles but this one stands out as one of the best. Doesn't take long to make (don't boil too long) and has a nice tangy texture just like the Japanese ones.
This is NOT Japanese ramen noodle.....
Knowing how good Yutaka Frozen Udon is, I was looking forward to trying this. Now I did and very disappointed!! It seems not made according to Japanese recipe. First of all, no Ramen noodle flavour at all. It is too pale and clear means wrong flour mixture. Also it is strangely precooked and frozen with ice, so it gets overcooked outside when boiled. Sorry but zero star from me (Japanese)

Really love these noodles. They are always on my list when in stock. Love making spicy ramen noodle soup
really good noodles
No soup included!! That was a bit pain. I realised at the last minute! Luckily I had a good soup base. If you have none, you can use chicken stock, adding white pepper, soy sauce, if you like a bit of miso and sesame oil. Beansprout, boiled/poached egg and fatty ham or roast pork. It takes big space of freezer. However, its really good noodle!
