Veggies rejoice because vegetarian pigs in blankets are here and in the form of carrot and halloumi. Ready in just 20 mins, the sweet and versatile carrot strips (or blankets) are first marinated in soy sauce for plenty of savoury umami flavour, plus maple syrup for sweetness and red wine vinegar to add a slight fruity sourness. Once marinated, the carrot strips are wrapped around salty halloumi and roasted until just golden. Ingredients

  • 1 tbsp soy sauce
  • 1 tbsp olive oil
  • 1 tsp maple syrup
  • ½ tsp red wine vinegar
  • ½ tsp black pepper
  • 1 large carrot, peeled into long strips
  • 250g halloumi, sliced into 16 strips

Method

Step 1

Preheat the oven to 190°C/170°C fan/gas 5. In a bowl mix the soy sauce, olive oil, maple syrup, red wine vinegar and black pepper. Pour the mixture over the carrot strips, cover and leave to marinate for 10 mins.

Step 2

Wrap each strip of halloumi with a carrot strip. Brush with leftover glaze and transfer to a lined baking tray.

Step 3

Pop onto a baking tray and in the oven for 15-20 mins, or until golden.
