In this grown-up Cherry Float Mocktail, food stylist and writer Emily Jonzen has used a winning combo of cherry soda and almond syrup to deliver big flavours and a refreshing fruity finish, with zero alcohol. Top with a scoop of ice cream for a classic ‘float’. For a delicious boozy version, simply add 100ml amaretto to the mix and blend.

Ingredients

  • 200g frozen pitted cherries
  • 2 x 330ml cans cherry soda (we used Dalston’s Cherry)
  • 50ml almond syrup (we used Giffard Orgeat Almond Syrup)
  • 4 scoops vanilla ice cream (optional)
  • 4 fresh cherries

Method

Step 1

Put the frozen cherries, cherry soda and almond syrup into a blender with a large handful of ice; blitz until smooth.

Step 2

Serve in glasses with the vanilla ice cream and a cherry, if using.
