We came up with this garlic soy bok choy dish with our friends at Mak Tok. It's is full of flavour and really easy to make, not to mention super speedy. Bok choy is also known as pak choi, and is a type of tender Chinese cabbage. Serve it like this as a light lunch or as a side dish for an Asian-inspired meal.

Ingredients

  • 250g bok choy
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • ¼ tsp ground white pepper
  • ½ tsp cornflour
  • ½ tbsp oil, for frying
  • 6 garlic cloves
  • ½ tbsp crispy onions

Method

Step 1

Bring a pot of water to boil and blanch the bok choy with a pinch of salt for 1 min. Immediately dip the bok choy in cold tap water and set aside.

Step 2

Prepare the sauce by mixing the soy sauce, sugar, white pepper and cornflour in a bowl with 11⁄2 tbsp water.

Step 3

Heat up a pan or wok and pour in some oil. Add the garlic and sauté it for a minute on medium heat to release the fragrance. Gently pour in the sauce and stir well for 30 seconds on medium-low heat.

Step 4

Pour the soy garlic sauce over the bok choy. Scatter with crispy fried onions and serve.
