Simplicity really is the name of the game with this veggie traybake. Heavenly halloumi is always a top choice. This traybake has enough greens to keep things healthy, and potato chunks to make it hearty too. Cooking it is just a matter of roasting the potatoes, then throwing in the other ingredients and carrying on as before. You don’t even have to spend long on preparation either, as there’s only potatoes, green beans and halloumi to chop. This meal is one of those that proves the point that simple food can be mouth wateringly delicious.

Ingredients

  • 700g potatoes, chopped into bite-size chunks
  • 5 cloves garlic, skin-on and bashed
  • 3 tbsp olive oil
  • 200g green beans, halved
  • 225g halloumi, cut into 2cm cubes
  • 1 squeeze lemon
  • 2 tbsp basil, roughly chopped

Method

Step 1

Preheat oven to 200°C/180°C fan/gas mark 6. Put the potatoes in a large roasting tray with the garlic, add the olive oil, season and toss well. Roast for 30 mins.

Step 2

Remove from the oven, add the beans and halloumi and toss to combine. You don't want the tray to be too crowded – everything should be in a single layer. Return the tray to the oven for 15 mins until the beans are tender and the cheese is starting to caramelise. Discard the garlic.

Step 3

Add a generous squeeze of lemon juice and toss everything again, then transfer to a serving dish. Scatter with basil and some black pepper.
