
Miso buttered toast with micro greens and poached egg

Mix miso (fermented soy bean paste) with butter and spread
it on toast for maximum umami. Plus sourdough is also a ferment!Time and servings

Ingredients
- 2 slices of sourdough bread
- 1 tbsp of butter, softened, at room temperature
- 1 tsp of miso, (red or white)
- 1 egg
- 1 sprinkle of sesame seeds, (or you can use shichimi togarashi spice mix)
Method
Step 1
Stir or blend the softened butter and miso together until combined. Season with black pepper.Step 2
Poach your egg: Fill a small saucepan with water and bring to a gentle simmer. Swirl and create a vortex in the water and gently crack the egg into the middle. Simmer gently for 4 mins for a runny yolk.Step 3
Meanwhile, make your toast and spread with the miso butter.Step 4
Use a slotted spoon to transfer the egg to a plate. Drain on a paper towel before placing on top of your toast, seasoning and sprinkling with the toasted sesame seeds .
