Syrupy, sweet and a little bit sour, pomegranate molasses adds a Middle-Eastern edge to this red cabbage recipe, which makes a perfect side dish for a roast dinner. The braised cabbage keeps its deep purple colour and a little bit of bite, but becomes soft and glossy while taking on the subtle spiced flavours of the cinnamon and star anise.

Ingredients

  • 1 tbsp olive oil
  • 1 red onion, sliced
  • 1 garlic clove, thinly sliced
  • 1 star anise
  • 1 cinnamon stick
  • 1 red cabbage (about 1kg), cored and shredded
  • 100g soft brown sugar
  • 3 tbsp pomegranate molasses

Method

Step 1

Heat the oil in a large pan over a medium heat and cook the onion for 3-4 mins to soften. Stir in the garlic, star anise and cinnamon stick and cook for another min, then add the cabbage, sugar and 200ml water.

Step 2

Bring to the boil then cover and cook for 10 mins. Remove the lid and cook for another 10-15 mins, stirring every so often, until most of the water has evaporated and the cabbage is looking dark and glossy. Stir in the pomegranate molasses and season to taste.
