
Chicken Fajitas with Chipotle

When it comes to homemade Mexican dishes, Chicken Fajitas is a brilliant dish to master. They require only a few ingredients, are pretty quick and easy to make and a real crowd pleaser especially when you lay out all the toppings and everyone can make theirs just as they want! This makes Chicken Fajitas great for a midweek meal or when entertaining friends or family at the weekend.What makes our recipe special is the fajita marinade made with our Chipotle Paste, lime juice and oregano - it makes the fajitas taste incredible!Time and servings

Ingredients
- 3 limes
- 2 tbsp of olive oil
- 1 tsp of dried oregano
- 2 chicken breasts, sliced
- 1 red onion, sliced
- 2 peppers, sliced
- 1 handful of fresh coriander, roughly chopped
- 1 tbsp of gran luchito chipotle paste
- 1 packet of gran luchito soft taco wraps
- 1 jar of gran luchito chipotle salsa
- 1 cup of sour cream
Method
Step 1
In a large bowl mix the lime juice, 1 tbsp of olive oil, Chipotle Paste, a sprinkle of dried oregano and a pinch of salt and pepper.Step 2
Cover the chicken with the marinade and place it in the fridge in a closed container for at least one hour.Step 3
In another bowl toss in the sliced onion and peppers, add a drizzle of oil and season with a pinch of salt and pepper.Step 4
When you are ready to cook, heat a pan until very hot. Add the vegetables and cook them for a few minutes until they char slightly. Remove your veggies from the pan and set aside for a minute.Step 5
Add the marinated chicken into the same pan and once it is nearly cooked, add your pepper-onion mixture back in and stir. Season with salt and freshly ground black pepper to taste.Step 6
Finish your fajitas with a sprinkle of freshly chopped coriander on top.Step 7
Warm-up your Soft Taco Wraps, spoon in your fajitas, serve with Gran Luchito Chipotle Salsa, a bit of sour cream and lime wedges on the side, and enjoy!
