This sweet potato tamarind and peanut butter recipe from Mob celebrates the natural sweetness of one of the most versatile vegetables, the sweet potato. They’re packed into corn tortillas and drizzled with a delicious homemade peanut butter dressing and a sprinkle of sour tamarind for an irresistible combination. Ready in just 40 minutes it’s the ultimate weeknight vegetarian meal.

Ingredients

  • 2 chillies, finely chopped
  • 5 tbsp soy sauce
  • 1 tbsp light brown sugar
  • 4 tbsp tamarind sauce, plus a drizzle to serve
  • 5 cm knob of ginger, grated
  • 4 cloves of garlic, grated
  • 1 tbsp olive oil
  • 4 sweet potatoes, chopped into small pieces
  • 3 tbsp peanut butter
  • 12 corn tortillas
  • 50g peanuts, toasted and roughly chopped
  • 1 handful of mint, finely chopped

Method

Step 1

In a bowl combine the chillies, soy sauce, light brown sugar and tamarind sauce. Add the ginger and garlic. Add in the oil and toss half this mixture with the sweet potatoes.

Step 2

Spread the sweet potato mix on a baking tray and roast for 30 mins.

Step 3

Heat up the remaining mixture in a pan with 150ml of water until bubbling, then mix in the peanut butter. Whisk until smooth and add in 100ml of water until it’s a smooth pourable consistency.

Step 4

Heat the tortillas in a dry pan and then add in the sweet potato filling. Drizzle over the peanut butter sauce, sprinkle with peanuts, mint and a drizzle of the tamarind sauce.
