Whole Sea Bream with Green Salsa

Move over, sausages and burgers: this super-simple seafood recipe is quick to prepare and really makes the most out of the barbecue. Ready in under half an hour, it's as great for a weeknight dinner as it is for a get-together with friends in the garden – just multiply the recipe depending on how many you're feeding. The easy salsa verde has a citrus and chilli kick that brings out the best in your grilled fish.

Ingredients
- 2 whole sea bream
- 15g fresh coriander
- 15g fresh flat leaf parsley
- 1 red chilli
- 2 tbsp lemon juice
- 130ml olive oil
Method
Step 1
Heat up the barbecue. Finely chop 15g coriander, 15g flat-leaf parsley and 1 red chilli.
Step 2
Place in a bowl and stir in 2tbsp lemon juice and 120ml olive oil.
Step 3
Slash the skin of the fish, brush with the remaining 10ml olive oil and season with salt and pepper. Cook over medium-hot coals for 15-20 mins, turning halfway.
Step 4
Serve the salsa verde over the fish.
