Ingredients

  • 1 tsp vegetable oil, for brushing the ramekins
  • 4 large eggs
  • 20g salted butter
  • 2 garlic cloves, finely chopped
  • 1 tsp rose harissa paste
  • ½ tsp sea salt flakes
  • ½ tsp freshly ground black pepper
  • 4 tbsp Greek yoghurt
  • 1 tsp fresh dill, roughly chopped
  • 2 pitta breads, toasted

Method

  • Step 1

For this recipe you will need four ramekins or ovenproof moulds to cook each egg in. Brush each ramekin with a little vegetable oil then fill two thirds full with hot water.
  • Step 2

Crack an egg into each ramekin then place in the air fryer and cook for 5 mins at 185°C, until the whites are set but the yolk is soft and runny.
  • Step 3

Meanwhile, melt the butter in a frying pan over a medium heat. Add the garlic, harissa, salt and pepper and fry for 3 mins.
  • Step 4

Divide the Greek yoghurt between 2 serving dishes. Remove the eggs from the ramekins with a slotted spoon and set on the yoghurt. Drizzle over the harissa butter, top each with a little dill and serve with toasted pitta bread.
