This bright salad is made with crunchy organic carrot and apple, and high-welfare chicken reared in Pembrokeshire.

  • 4 Slices Ready-cooked chicken, (can use up to 6 slices)
  • 3 organic carrots, (cut into fine matchsticks with a julienne peeler or, grated)
  • 1 organic apple, (cut into sticks or grated)
  • 2 tbsp Mint, (leaves chopped)
  • 2 tsp Caster sugar, (for the dressing)
  • 1½ Limes, (juice only, for the dressing)
  • 2 tbsp Fish Sauce, (for the dressing)
  • 1 tbsp Rapeseed Oil, (for the dressing)
  • 1 Red chilli, (finely chopped, deseeded if you like it less hot, for the dressing)


Step 1

Combine the dressing ingredients and stir to dissolve the sugar.

Step 2

Combine the chicken, carrot and apple together with the chopped mint. Drizzle over the dressing and toss lightly.
