Ingredients

  • 1 lime, juice only (half for the slaw, half for the salsa)
  • 3 green chillies, deseeded and chopped (for the salsa)
  • 1 banana shallot, chopped (for the salsa)
  • 10g coriander, (for the salsa)
  • ¼ red cabbage, finely sliced (for the slaw)
  • 1 red onion, finely sliced (for the slaw)
  • 1 tbsp mayonnaise, (for the slaw)
  • 4 quarter pounder beef burgers
  • 4 slices oak-smoked cheddar
  • 4 sesame seed buns
  • 60g sliced gherkins

Method

Step 1

Add the salsa ingredients to a bowl, season and stir.

Step 2

In another bowl, mix the slaw ingredients, adding the lime juice to taste.

Step 3

Cook the burgers on a hot barbecue for 6 mins, turning every 2 mins. Then lay the slices of smoked cheese on top and cook for 2 mins with the lid on to melt the cheese.

Step 4

Remove the burgers and add the buns to the barbecue, cut side down, to toast.

Step 5

Assemble in the bun, burger first, followed by gherkins, slaw and salsa.
