Fluffy, American style muffins. A proper crowd pleaser.

  • 300g Self Raising Flour
  • 1 tsp Baking Powder
  • 150g Sugar
  • 1 Lemon, (Zest Only)
  • 150g BerryWorld Blueberries
  • 1 Egg
  • 225ml Milk
  • 50ml Vegetable Oil


Step 1

Heat the oven to 200C/ 180C fan and line a muffin tin with 10 paper cases.

Step 2

Put the flour, baking powder, sugar, lemon zest and blueberries into a bowl and stir to combine.

Step 3

In a jug, mix the egg, milk and vegetable oil with a fork until combined.

Step 4

Pour the wet ingredients into the dry ingredients and stir. Don’t over mix, it’s fine to have a few lumps.

Step 5

Divide between the muffin cases and bake for 20 minutes until they are risen and pale gold.

Step 6

Leave to cool then keep in an airtight tin for up to 3 days.
