Ingredients
- 600g full-fat cottage cheese
- 6 tbsp smooth or crunchy Biscoff spread
- 3 tbsp dark chocolate chips
- 4 Biscoff biscuits, crumbled
Method
Step 1
Scrape the cottage cheese and Biscoff spread into the bowl of a food processor and whizz for 2 mins, until smooth and thickened.Step 2
Pour the mixture into a 900g loaf tin then sprinkle over the chocolate chips and fold through. Smooth the surface of the ice cream then transfer to the freezer for at least 6 hrs, or overnight, until set.Step 3
Remove from the freezer 10-15 mins before serving. Scoop into bowls and sprinkle with crumbled Biscoff biscuit to serve.
