Ingredients

  • 4 Quorn Meat Free Sausages
  • 2 tbsp olive oil
  • 2 shallots , peeled and finely chopped
  • 1 medium potato , peeled, boiled and diced into 1cm cubes
  • 50g button mushrooms, halved
  • 4 cherry tomatoes
  • 6 large free range eggs
  • 1 pinch paprika
  • 2 tbsp fresh flat leaf parsely

Method

Step 1

Heat oil in large non-stick frying pan. Fry Quorn Sausages for 8 minutes, add shallots and diced potato and continue cooking for 2-4 minutes on a medium heat until golden brown.

Step 2

Remove sausages and slice diagonally into bite-sized pieces. Return to pan.

Step 3

Add the mushrooms and tomatoes and fry for a further two minutes.

Step 4

Lightly whisk eggs, water, paprika and seasoning together in a bowl. Stir in the parsley.

Step 5

Pour the egg mixture into the frying pan and lightly shake the pan to distribute the mixture. Reduce the heat and cook the base of the frittata for 2-3 minutes until lightly set.

Step 6

Place pan under hot grill for 2-3 minutes until top of frittata is lightly set.

Step 7

Stand for 1-2 minutes before serving, dusted with a little paprika
