Perfect in the autumn or winter, this is a soup which will help protect your immune system whatever the season.

Ingredients

  • 1 tsp extra virgin olive oil
  • 6 shallots
  • 1 garlic
  • 4 large baking potatoes
  • 2 pint vegetable stock
  • 300g broccoli
  • 50g natural yoghurt

Method

Step 1

Heat the oil, with the shallots, garlic and potatoes. Cover and sweat for 3 to 4 minutes before adding the Swiss bouillon and bringing to the boil.

Step 2

Simmer for 5 mins and then add the broccoli florets. Simmer 8 to 10 minutes but don't overcook. Blend in a food processor, then add seasoning and serve with a swirl of yogurt.
