Green beans make a perfect match for salty, savoury preserved lemon and nutty bulgur.

Ingredients

  • 1 tbsp olive oil
  • 1 onion, sliced
  • ½ tsp turmeric
  • ½ tsp cinnamon
  • ½ tsp cumin
  • 200g bulgur wheat
  • 200g green beans, trimmed and halved
  • 30g goji berries
  • 600ml veg stock
  • 50g pistachio nuts, toasted and roughly chopped
  • 2 preserved lemons, deseeded and roughly chopped
  • ½ lemon, juice only
  • 1 small bunch mint, leaves chopped
  • 1 small bunch coriander, leaves chopped
  • 150ml yogurt, seasoned (optional)

Method

Step 1

Heat the oil in a large-lidded frying pan over a medium heat and cook the onion for 5 mins to soften. Then stir in the turmeric, cinnamon and cumin and cook for another min until fragrant. Add the bulgur wheat to the pan along with the green beans and goji berries.

Step 2

Pour over the stock and bring to the boil, then cover and cook over a high heat for 5 mins. After this, reduce the hob to the lowest heat and cook for another 5 mins.

Step 3

Remove from the heat and stir in the pistachios, preserved lemons, lemon juice and herbs. There will be a tasty crispy layer at the bottom of the dish, mix this through as you go. Serve with the yogurt drizzled over if you like.
