Burrata, Blood Orange and Radicchio Salad

This salad signals the start of spring - bright, vibrant and zingy. Blood oranges work remarkably well with creamy Burrata - the perfect dish to impress your dinner party guests or brighten up lunch time in less than ten minutes!

Ingredients

  • 1 whole Blood Orange
  • 100g Burrata
  • 2 Handfuls Radicchio, (A mixed selection)
  • 1 small handful Rocket salad
  • 2 tablespoons Lemon Juice
  • 50ml Olive Oil
  • 1 tablespoon Caster Sugar

Method

Step 1

Slice the radicchio and wash, wash the rocket and dry both in a salad spinner or on a clean cloth.

Step 2

To make the dressing, whisk the lemon juice and sugar until dissolved, then slowly whisk in the olive oil and season to taste with salt and pepper.

Step 3

Toss the leaves in a little lemon dressing and plate up.

Step 4

Add the blood orange segments and top with the burrata.
