Spoons at the ready for this Caribbean-Inspired Affogato, a clever dessert-meets-cocktail hybrid featuring hot coffee, cool and creamy plant-based coconut ice cream and a warming tot of rum. Food stylist and writer Emily Jonzen suggests going all-out on the theme by using rum-infused instant coffee for an extra dash of Caribbean spirit.

  • 2 tsp instant coffee (we used Little’s Havana Rum Flavour Infused Instant Coffee)
  • 50ml golden rum
  • 2 scoops of The Coconut Collaborative Coconut & Vanilla Ice Cream
  • 1 tbsp toasted coconut flakes


Step 1

Dissolve the coffee in 50ml boiling water; add the rum.

Step 2

Divide the ice cream between 2 glasses and pour over the coffee mixture. Top with the coconut flakes and serve immediately.
