This carrot and sweet potato mash is a comforting side dish that adds colour to the table. The carrots and sweet potatoes are slow-roasted in garlic until tender, blitzed until smooth and brought together with double cream, honey and parmesan.   • 400g carrots, cut into small chunks
  • 200g sweet potatoes
  • 3 garlic cloves, finely chopped
  • 1 tbsp olive oil
  • 1 tbsp thyme, roughly chopped, plus extra to serve
  • 50ml double cream
  • 1 tbsp honey
  • ½ tsp ground turmeric
  • 1 tbsp parmesan


Step 1

Preheat the oven to 200°C/180°C fan/gas mark 6.

Step 2

Add the carrots, sweet potatoes and garlic to a roasting tray, drizzle with the olive oil and season with salt, pepper and chopped thyme. Cover with foil and roast in the oven for an hour.

Step 3

Remove the roasted carrots and sweet potatoes from the oven and pulse in a food processor until the mixture is a coarse mash. Empty into a saucepan over a low heat and fold in the double cream, honey, turmeric and parmesan. Warm together for 5 mins.

Step 4

Tip into a serving dish and sprinkle with some thyme.
