Pine nuts and sweet, juicy raisins add texture and flavour to these lovely greens.
Cook's tip: To plump up the raisins steep in warm water for 5 mins beforehand.

  • 300g baby spinach, washed
  • 3 tbsp extra virgin olive oil
  • 2 cloves garlic, peeled and sliced
  • 3 tbsp raisins
  • 3 tbsp pine nuts


Step 1

Steam the spinach for 2-3 mins, until just wilting, then drain thoroughly.

Step 2

Heat a large frying pan over a medium heat. Pour in the olive oil to cover the bottom.

Step 3

Sauté the garlic for 2 mins.

Step 4

Add the raisins and pine nuts and sauté for 1 min more.

Step 5

Add the drained spinach to the pan and mix well to coat with oil. Season to taste and serve.
