  • 150g unsalted butter, softened, plus extra for the tin
  • 100g soft brown sugar
  • 100g caster sugar
  • 1 large egg
  • 175g plain flour
  • ½ tsp baking powder
  • ½ tsp fine sea salt
  • 15 Celebrations chocolates


Step 1

Grease and line a 23cm loose-base cake tin with baking parchment. Heat the oven to 170C/ 150C fan/ gas 4 1/2.

Step 2

Put the butter and both sugars into a large mixing bowl and whisk with an electric hand whisk until pale and fluffy. Beat in the egg until fully combined.

Step 3

Tip in the flour, baking powder and salt then gently fold together with a large metal spoon.

Step 4

Chop 5 of the Celebrations and gently fold through the mix.

Step 5

Scrape into the prepared cake tin and smooth the top. Bake for 35 mins.

Step 6

Remove the cookie from the oven to a wire rack and gently push in the remaining 10 whole Celebrations.

Step 7

Leave to cool in the tin for 10 mins, remove from the tin and leave until cool enough to handle then slice to serve for warm and gooey cookie, or set in the fridge for at least 2 hrs and then slice to serve.
