Cherry Froyo With Amaretti

This clever way of using yoghurt came over from America and we’ve never looked back.

  • 500g cherries
  • 150g caster sugar
  • 1 tbsp cherry brandy or kirsch, optional
  • 500g Greek-style yoghurt
  • 100g crème fraîche
  • 6 Amaretti biscuits


Step 1

Remove all stalks, squash the cherries with the side of a knife and remove stones. Roughly chop and add to a saucepan with the sugar and 2tbsp water. Bubble for 15 mins, until soft. Turn off the heat and stir in the brandy or kirsch, if using. Leave to cool, then whizz to a rough purée with a stick blender – you want chunks of cherry.

Step 2

Mix the yoghurt and crème fraîche and spoon into a freezer-proof container. Swirl with the cherries. Freeze overnight before scooping and crumbling amaretti over to serve.
