- Chicken Dippers…
Ingredients
- 20g Parmesan cheese , grated
- 20g Cheddar cheese , grated
- 4 tbsp dried breadcrumbs
- ½ tsp paprika
- ½ tsp cayenne pepper , or less, if you prefer
- 1 egg , lightly beaten
- 2 tbsp flour
- 2 chicken breasts , around 250g in total, cut into 1cm strips
- 6 tbsp sunflower oil

This recipe is suitable for freezing (before frying)
Method
Step 1
Mix together the cheeses, breadcrumbs, paprika, cayenne pepper and seasoning, and place in a shallow dish
Step 2
Put the beaten egg in another dish and the flour in a third
Step 3
Dip each chicken strip first in the flour, then in the egg, and finally coat in the breadcrumb mixture.
Step 4
Pour the oil into a frying pan over a medium heat.
Step 5
Fry the chicken dippers in batches, taking care not to overfill the pan, and sauté for about 2 minutes on each side until golden and cooked through - drain on absorbent kitchen paper and serve.
