A favourite of Moroccan cuisine, preserved lemons add a mouthwatering intensity of flavour to these juicy chicken legs. This is a recipe well worth dusting off and firing up the barbecue for, although you can cook it in the oven if you prefer. Keep the Middle Eastern theme going in your accompaniments and serve with herby couscous or rice, peppered with pomegranate seeds.

  • 4 preserved lemons
  • 2 red chillies
  • 4 tbsp ground coriander
  • 6 tbsp olive oil
  • 4 tbsp honey
  • 4 tsp lemon juice
  • 4 cloves garlic, crushed
  • 4 chicken legs


Step 1

Finely chop the lemons and red chillies and combine with the ground coriander, olive oil, honey, lemon juice and the crushed garlic cloves.

Step 2

Season and coat the chicken legs, cover and leave in the fridge for 1-12 hrs.

Step 3

Cook fully in the oven for 35 mins at 220°C/200°C fan/gas 7 and finish on the BBQ.
