- Chicken & penne pasta with Mediterranean…

Ingredients
- 1 jar Seeds Of Change® Mediterranean Vegetable Sauce
- 340g penne pasta
- 240g chicken breast
- 80g chorizo, sliced
- 4 sprigs basil
- 80g Parmesan cheese, grated
- 1 tsp sea salt
Method
Step 1
In a large saucepan of boiling, salted water, cook your pasta for 8-10 minutes, drain and reserve.
Step 2
On a high heat in a medium sized frying pan gently sauté the chicken fillets for 1 minute each side until golden brown, add the chorizo and cook for one more minute to allow the oils to be released.
Step 3
Stir in the pasta sauce, bring to the boil and simmer for 2 minutes.
Step 4
Fold in the cooked pasta; divide into four warm bowls and top with the cheese and a sprig of Basil for garnish.
