Chicken with a Parmesan Pesto Crust

This quick dinner is great served alongside buttered new potatoes, and so seasonal vegetables. It is great for the whole family to enjoy as a quick and simple mid-week meal.

  • 4 boneless chicken thighs, (Boneless, Skin removed)
  • 5 tbsp Sacla’ Classic Basil Pesto
  • 1 tbsp olive oil
  • 100g fresh breadcrumbs
  • 45g parmesan, (Grated)
  • 45g pine nuts
  • 3 tbsp fresh parsley, (Chopped)


Step 1

Preheat the oven to 200°C/180°C fan Lightly grease a baking tray with a little oil.

Step 2

In a small bowl mix together the breadcrumbs, Parmesan, pine nuts and parsley.

Step 3

Season with salt and pepper.

Step 4

Spread the Sacla’ Pesto all over the chicken thighs, then cover generously with the cheesy crumb mixture.

Step 5

Drizzle with a little oil and cook for 15 - 20 minutes, until the crumbs are golden and the chicken cooked through.
