You can’t beat this recipe for a sophisticated way of cooking chicken. It is bound to impress your dinner guests whatever the occasion.

  • 1 jar Seeds Of Change® Tomato and Garlic Sauce
  • 20g bacon lardons
  • 4 chicken breasts
  • 200ml chicken stock
  • 1 lemon, the zest of
  • 3 tablespoons tarragon
  • 2 cloves garlic
  • 50g pitted green olives
  • 200ml white wine
  • 2 tablespoons olive oil


Step 1

Season the chicken with freshly ground pepper. Heat the oil in a large frying pan and fry the chicken, skin side down, until golden brown. Turn over to brown the other side, then remove from the pan

Step 2

Add the bacon lardons and garlic to the pan and fry until golden.

Step 3

Add the lemon zest and then the wine. Simmer until the wine has reduced by two thirds.

Step 4

Add the chicken stock, the Seeds of Change Tomato & Garlic Sauce, the olives and half of the tarragon. Put the chicken breasts back in, then simmer for 25 minutes until the chicken is cooked and the sauce has reduced by half. Scatter the rest of the tarragon leaves on top and serve.
