Chunky Chilli with Chocolate and Quick Guacamole

We've used braising steak for a hearty, chunky chilli - perfect for a relaxed dinner party.

Ingredients

  • 3 tbsp olive oil
  • 1 kg braising steak , cut into 2cm pieces
  • 500ml beef stock
  • 1 onion , finely chopped
  • 3 cloves garlic cloves, crushed
  • 2 tsp hot chilli powder
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tin (400g) tin chopped tomatoes
  • 2 tbsp tomato puree
  • 1 tsp fresh thyme, roughly chopped
  • 800g (400g) tin red kidney beans , drained and rinsed
  • 3 ripe avocados , stoned and roughly chopped
  • 1 large tomato , deseeded and finely chopped
  • 1 red onion , finely chopped
  • 1 red chilli , finely chopped
  • 2 tbsp fresh coriander , roughly chopped
  • 1 lime , juiced, plus extra wedges to serve
  • 50g dark chocolate , grated
  • 150g tortilla chips
  • 300g white or brown rice, cooked, to serve (optional)

Method

Step 1

Heat 1 tsp oil in a casserole pan over a medium heat. Add half the steak and fry until browned all over, then transfer to a bowl.

Step 2

Deglaze the pan with a splash of stock by scraping up any caramelised bits with a wooden spoon, then pour it over the browned steak. Repeat the browning and deglazing with the remaining steak and 1 tsp oil and set aside until needed

Step 3

Add the remaining 1 tsp oil to the pan, lower the heat slightly and tip in the onion. Cook, stirring occasionally, for 5-6 mins, until softened and golden.

Step 4

Add the garlic, chilli powder, paprika and cumin and fry for 1 min, until fragrant.

Step 5

Return the steak and deglazing juices to the pan, add the tinned tomatoes, tomato purée, thyme and remaining stock. Cover and simmer gently for 1½-2 hrs, until the steak is tender, adding the kidney beans for the final 30 mins.

Step 6

Meanwhile, make the guacamole. Put the avocado, tomato, onion, chilli, coriander and lime juice in a bowl and mix well. Season to taste.

Step 7

Just before serving, stir the grated chocolate into the chilli until melted. Serve the chilli with the guacamole, tortilla chips and extra lime wedges. Delicious with rice, if you like.
