Only four ingredients are needed for this recipe – just four! And if you must, you can manage without the olive oil, too. These savoury little bites are ideal for packing into a picnic basket or serving up as nibbles at a party. The pesto we've used is vegetarian, making them a real crowd-pleaser.

  • 320g ready-rolled puff pastry
  • 5 tbsp pesto (we used Sacla Fresh Coriander Pesto)
  • 100g grated mature cheddar
  • 1 tbsp olive oil


Step 1

Preheat oven to 200°C/180°C fan/gas 6. Unroll the pastry, keeping it on the piece of paper it comes wrapped in. Spoon over the pesto and spread it out evenly all over the pastry, then scatter the grated cheese over the top.

Step 2

Take one of the short ends and tightly roll the pastry up, then pop in the fridge for 10 mins to firm up.

Step 3

With a sharp knife, slice the roll into 12 swirls, then lie them flat on 2 non-stick baking trays leaving a little space around them to puff up. Lightly brush each pinwheel with olive oil and bake for 12 mins, or until puffed and golden. Leave to cool for a few mins before carefully removing from the tray using a spatula. Serve straight away or store in foil or tupperware.
