
Coronation Chicken

This classic coronation chicken salad is just the right amount of fresh and familiar with some added crunch from more-ish poppadum croutons. We’ve shredded ready-cooked chicken breast but this would be delicious with leftover roast chicken breast and thigh, or even chickpeas for a veggie twist. Load up on a platter for the ultimate addition to a Coronation street party for King Charles, or perfect for picnics, lunchboxes, sandwich filler or even a jacket potato topper. Ingredients
- 3 tbsp mayonnaise
- 3 tbsp natural yoghurt
- 2 tsp medium curry powder
- 1 tbsp mango chutney
- 200g cooked chicken breast, shredded
- 2 tsp lemon juice
- 60g watercress
- ½ cucumber, sliced
- 1 tbsp sultanas
- 1 tbsp flaked almonds
- 30g mini poppadums
- 1 tsp nigella seeds
- 10g coriander, leaves only
Method
Step 1
Mix the mayonnaise, yoghurt, curry powder and 2 tsp mango chutney in a medium bowl until smooth (see Tip). Add the chicken and stir to coat.Step 2
Mix the remaining mango chutney with the lemon juice and season with salt and freshly ground black pepper. Set aside.Step 3
Divide the watercress and cucumber between two serving plates and top with the dressed chicken.Step 4
Scatter over the sultanas, almonds, popadums, nigella seeds and coriander then drizzle with the reserved dressing to serve.
