Tender slow cooked beef is the perfect pairing for crunchy Hard Shell Tacos. 

In our recipe we cook the beef slow and low in stock and our secret ingredient – Gran Luchito Chipotle Paste which gives the beef a delicious and smoky depth of flavour.

Our favourite way to serve these tacos is topped with a crunchy slaw made with finely sliced veggies and a dollop of Chipotle Mayo.

Ingredients

  • 1 pack braising beef
  • 2 tablespoons olive oil
  • 2 white onions, diced
  • 5 cloves garlic, minced
  • 2 bay leaves
  • 2 teaspoon chipotle paste
  • 1 handful fresh coriander
  • 500ml beef stock
  • 1 cup apple cider vinegar
  • 1 pack hard shell tacos
  • 2 limes, cut into wedges

Method

Step 1

Preheat the oven to 180°C. Heat a large, oven-proof saucepan with the olive oil .

Step 2

Meanwhile, dry the beef with a paper towel and generously season with salt & pepper.

Step 3

When the oil is very hot, add the beef and brown all over. Once ready, remove the beef from the pan.

Step 4

Reduce the heat to medium and add the onion, garlic, bay leaves and Gran Luchito Chipotle Paste as well as a good pinch of salt & pepper. Cook for about 6-10 minutes, stirring regularly.

Step 5

Return the beef and juices to the pan followed by the beef stock, apple cider vinegar and coriander. NB: Add more water halfway through the cooking time to avoid your meat from getting dry.

Step 6

Stir and place the pan covered with a lid or foil in the oven for 3 hours. When it’s ready the meat will be falling off the bone.

Step 7

Remove the beef and shred the meat. Mix the meat with the pan juices, taste and add more seasoning if necessary.

Step 8

Serve the shredded meat in the baked Hard Shell Tacos with lime wedges on the side.
