Cumin and Coriander Veal Steak Salad

The combination of spices in this recipe are often paired with chicken or lamb, but they also work brilliantly with veal. The mango and cucumber salsa provides a lovely contrast to the spiciness of the marinated meat. Served with a dressed salad this makes a lovely light, but flavoursome dish. Alternatively, it would also work as a more substantial dish served with aromatic rice.

Ingredients

  • 8 Veal Steaks
  • ½ cucumber
  • 1 mango
  • 1 small bunch fresh coriander , finely chopped, plus 2 tbsp reserved for the marinade
  • 1 small bunch fresh mint , finely chopped, plus 2 tbsp reserved for the marinade
  • 1 tbsp balsamic vinegar
  • 1 olive oil
  • 1 lemon , juiced, half for the veal, half for the marinade
  • 1 bag salad
  • 1 tsp turmeric
  • 2 tsp garam masala
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 6 tbsp plain yogurt
  • 1 garlic clove , very finely chopped
  • 2 cm root ginger , very finely chopped

Method

Step 1

To make the marinade, mix the spices, yogurt, garlic and ginger in a bowl then stir in the fresh herbs and lemon juice.

Step 2

Add the veal Steak and turn so they are completely covered. Cover and leave to marinate in the fridge. It is best if you leave the veal to marinate overnight, or at least for a few hours, to pick up as much flavour as possible.

Step 3

To cook the veal, preheat the grill to medium and place a grill tray under the heat. Once it is hot, add a splash of olive oil. Now lay the medallions on the tray, shaking off any excess marinade, and season with salt.

Step 4

Grill for 3-4 minutes on each side.

Step 5

Reserve a little of the liquid that has collected in the tray for your mango and cucumber salad and leave the veal to rest for 5 minutes.

Step 6

To prepare the salad, slice the cucumber into 3mm slices and then into sticks, and finally cross chop them into dice.

Step 7

Peel the mango and cut into slices, then sticks, and finally dice, like the cucumber.

Step 8

Put both in a bowl and add the chopped coriander, mint and reserved cooking liquid.

Step 9

Make the dressing by adding the balsamic vinegar and sesame oil to the bowl, then mix everything together.

Step 10

Spoon 4 piles of the mango and cucumber salad (1 heaped tbsp each) onto each plate.

Step 11

Slice each piece of veal in half diagonally and place a slice of veal on top of each pile of salad.

Step 12

Dress the salad with olive oil and lemon juice and add a small handful to the centre of each plate.
