This easy-to-make carrot cake is a perfect recipe to bake together as a family!

  • 200g self-raising wholemeal flour
  • 115g plain flour
  • 350g caster sugar
  • 2 tsp cinnamon
  • 2 tsp bicarbonate of soda
  • 250ml Sunflower oil
  • 3 large carrots , peeled and grated
  • 4 eggs
  • 2 lemons , grated, for the topping
  • 225g icing sugar , for the topping

Recipe tips / Prepare ahead

You will need a greased and lined 20cm square cake tin for this recipe.


Step 1

Mix both flours, sugar, cinnamon and bicarbonate of soda together.

Step 2

Mix in the carrot and gradually beat in Flora Cuisine and eggs. Pour into a greased and lined 20cm square cake tin.

Step 3

Bake in a preheated oven at 180C/ Gas 4, for 45-55 minutes. Cool on a wire rack.

Step 4

Use a sharp knife to remove the outer pith and then segment the lemons. Squeeze out the remaining juice and add to the icing sugar in a bowl with the segments. Mix gently and spread over the cake. Sprinkle with the zest.
