Fish and Noodle Salad

Clean and light, this salad is packed with Omega 3, which is good for your brain, heart and immune system.

  • 1 packet rice noodles
  • 2 tbsp olive oil , plus a little extra for brushing
  • 1 tbsp tamari
  • 1 tbsp rice vinegar
  • ½ tsp sesame oil
  • 1 tbsp sweet chilli sauce
  • 130g tuna steak , (approximately)
  • 150g fresh peeled prawns
  • 130g salmon fillet, (approximately)
  • 1 avocado , peeled and cut into small pieces
  • 3 spring onions, finely sliced
  • 4 tbsp coriander, chopped
  • 3 little gem lettuces, leaves separated
  • 3 tbsp pickled ginger, finely sliced (optional)


Step 1

Cook the noodles according to the packet instructions.

Step 2

While the noodles are cooking make the dressing: mix together the tamari, rice vinegar, sesame oil and sweet chilli sauce.

Step 3

Drain the noodles thoroughly and then pour over the dressing, toss well to mix.

Step 4

Preheat a griddle pan, brush the tuna and the salmon with a little oil and then cook in a preheated pan, turning once until just cooked through.

Step 5

Remove from the pan and flake into chunks before tossing through the noodles.

Step 6

When fully cooled add the prawns, spring onions and avocado to the nddles and toss to mix.

Step 7

Serve oiled into the little gem leaves and topped with pickled ginger, if using.
