- Fish and Noodle Salad

Ingredients
- 1 packet rice noodles
- 2 tbsp olive oil , plus a little extra for brushing
- 1 tbsp tamari
- 1 tbsp rice vinegar
- ½ tsp sesame oil
- 1 tbsp sweet chilli sauce
- 130g tuna steak , (approximately)
- 150g fresh peeled prawns
- 130g salmon fillet, (approximately)
- 1 avocado , peeled and cut into small pieces
- 3 spring onions, finely sliced
- 4 tbsp coriander, chopped
- 3 little gem lettuces, leaves separated
- 3 tbsp pickled ginger, finely sliced (optional)
Method
Step 1
Cook the noodles according to the packet instructions.
Step 2
While the noodles are cooking make the dressing: mix together the tamari, rice vinegar, sesame oil and sweet chilli sauce.
Step 3
Drain the noodles thoroughly and then pour over the dressing, toss well to mix.
Step 4
Preheat a griddle pan, brush the tuna and the salmon with a little oil and then cook in a preheated pan, turning once until just cooked through.
Step 5
Remove from the pan and flake into chunks before tossing through the noodles.
Step 6
When fully cooled add the prawns, spring onions and avocado to the nddles and toss to mix.
Step 7
Serve oiled into the little gem leaves and topped with pickled ginger, if using.
