Garlic and Guajillo Fish Tacos

Ingredients
- 1 tbsp olive oil, plus 2 tbsp for the marinade
- 400g cod fillets (or other white fish), cut into bit-sized chunks
- 1 fresh lime, juiced (to serve)
- ½ tub Garlic & Guajillo Mix
- 6 tortillas
- 1 tub Gran Luchito Salsa, to serve (optional)
- 1 handful cabbage, shredded (to serve)
- 1 coriander, to serve (optional)
Method
Step 1
Make the marinade by combining 2 tbsp olive oil with Garlic & Guajillo Mix.
Step 2
Add the fish pieces and marinade for 20 minutes.
Step 3
Heat 1 tsp olive oil in a pan over a medium heat. When the oil is hot, add the fish and cook for 5 minutes.
Step 4
Remove the fish from the heat and leave to rest for 3 minutes.
Step 5
Serve spooned onto warm tortillas with lime juice, shredded cabbage, coriander & Gran Luchito Tomatillo Salsa.
