This ginger loaf cake, with its warming spices , is the perfect accompaniment for the delicious Speakeasy alcohol-infused ice cream.

  • 175g unsalted butter
  • 200g caster sugar
  • 3 tablespoons golden syrup
  • 250ml milk
  • 250g plain flour
  • 1 tablespoon ground ginger
  • 1 teaspoon ground allspice
  • 1 teaspoon bicarbonate of soda


Step 1

Grease and Flour a 20cm x 10cm loaf tin

Step 2

Preheat oven to 180c

Step 3

Gently heat and stir the butter, sugar and golden syrup in a small saucepan, until fully combined

Step 4

Bring the mixture to the boil then remove from heat and set aside

Step 5

Sieve the flour, bicarbonate of soda and spices into a large bowl

Step 6

Stir in the liquid mixture until just combined together

Step 7

Pour the mix into the prepared loaf tin

Step 8

Reduce oven temperature to 160C and place loaf tin in the oven Bake for 1 hour or until the top of the loaf springs back when lightly touched

Step 9

Serve warm with a generous scoop of Ice Cream
