Ingredients

  • 50g gluten free bread
  • 25g ground almonds
  • 50g dessicated coconut
  • ½ tsp cream of tartar
  • ¼ tsp bicarbonate of soda
  • 75g soft brown sugar
  • 75ml vegetable oil
  • 4 medium eggs , beaten
  • 2 limes , zest and juice
  • 40g caster sugar

Recipe tips / Prepare ahead

Preheat oven to 180c/Gas4. Line a tin with 12 paper cases.

Method

Step 1

Place the bread in a processor and blitz until it is fine crumbs.

Step 2

Tip into a mixing bowl and add the ground almonds, coconut, cream of tartar, bicarbonate of soda and the brown sugar. Mix.

Step 3

Beat together the oil and eggs and the finely grated zest of one lime. Add this to the breadcrumb mixture and stir well.

Step 4

Divide the mixture between the cake cases.

Step 5

Bake in the preheated oven for 20-25 minutes, until golden and risen.

Step 6

While the cakes are cooking place the caster sugar, the remaining zest and the lime juice in a saucepan and heat gently to dissolve.

Step 7

Bring to the boil and cook until the mixture has reduced a little and become syrupy. Remove the cakes from the oven.

Step 8

Prick each cake with a skewer several times and then spoon over the syrup. Serve when cool.
